Gut Healthy Breakfast Muffins

Oats for breakfast doesn’t need to mean porridge, breakfast muffins are an alternative. These dairy free banana muffins are quick to make and with no added sugar can be a healthy breakfast or lunchbox snack. Bananas are rich in potassium, supporting cardiovascular health, and oats contain beta glucan, a fibre that helps your colon stay healthy.

Ingredients

100g ground almonds
120g oats (ground in food processor)
1/2 tsp baking powder
5 eggs
1/2 tsp cinnamon
2 mashed bananas
100g raisins

Preparation

Mix dry ingredients in a large bowl
Add mashed banana then beat in each egg slowly
Add raisins
Pour into to silicon cupcake moulds and cook for 25 mins on 160 fan oven.

Healthy Breakfast Muffins help you add more variety to your diet, which feeds your gut bacteria. The more diverse diet you eat, the more diverse your gut microbes will be, and this helps to support your overall health.

Can be made gluten free using gluten free oats if needed.

QUICK TIP –  I grind up my oats in a Nutribullet, then pour these into a bowl with the other dry ingredients.

Then I blend up the banana and eggs in the Nutribullet too, and pour these into the dry ingredients together. This reduces the mixing time.
