Warm Lentil & Halloumi Salad With Spinach

Puy lentils are sometimes called the ‘caviar for the poor’! They are delicious, soft and hold their shape. High in fibre, low in calories lentils are a perfect lunch item. You can whip up this warm lentil salad in 5-10 minutes.

Ingredients

100g fresh washed spinach 125g pre-cooked Puy lentils (I use Merchant Gormet) 5 large button mushrooms 1 clove garlic 50g Halloumi cheese dash soy sauce

Preparation

Chop and fry the garlic, Halloumi and mushrooms in a little oil Add spinach, cooked lentils and soy sauce and stir well for around 2 minutes Dish up and enjoy for lunch

Why I like this meal

This is a fantastic meal that will keep you full until dinner. Lentils are a great source of vegan protein, and also fibre which feeds you gut microbes.

I tend to make this lunch once a week. I do enjoy eating bread as well sometimes, but I try not to eat toast every day for lunch.
